Hey man, been watching the elden ring run since day 1. It has been great watching you improve, it's good to see you play your way and not let chat choose your weapon for you. But there are a few things that you can do to help yourself, figure out the whetstone and wondrous physic. Free resources you have access to, will increase your damage and add an extra heal flask.

IMO the game is beatable for almost anyone. With it being open world worst case scenario you can level up more and come back. That in addition to the spirit summons and the strength of mid/late game weapons & armor you should be fine
